Football, Fast & Easy

September 28, 2015

Fall means the introduction to football and with football, there will almost always be snacks. It’s like a seasonal ritual that brings a family together when they might not usually take the time to bond. As always, food allergies are a concern in our home but so is time away from each other. The answer – choose snacks that are safe, simple but also gluten free. When this is a winning combination, why not keep it going for other snacking events as well?

Be a Cheerleader What can you do when you are not a huge sports fan at all? My extent of football knowledge is very limited. What I do know is how to feed and that I want to be supportive in whatever way I can. For me, this always seems to go back to food. Food is life; it can nourish us, it can bring people together and it can even be used as a way to show that we want to be a part of what’s going on, even when we’re not sure how to do that. So when I do show my spirit, I like to do it with creativity and ease.

Pretzel Pom Poms

  1. Preheat the oven to 350°. Line a baking sheet with foil and lightly coat with spray oil. Set aside.
  2. Set aside Glutino pretzel sticks. Using a mallet, pound the chicken strips very thin. Gently wrap the chicken strips around the end of a Glutino pretzel stick (best length of the chicken strip would approximately 3 inches). Place onto the prepared baking sheet, leaving some space between each stick. Spray with oil, then sprinkle with sea salt, garlic powder and paprika. For additional flavor options, sprinkle crushed Glutino Buffalo Style or Honey Mustard pretzels.
  3. Bake for 15-20 minutes.

Small Sammies, Big Hit Bite-sized is the best, hands down. Imagine a mini grilled cheese that is football-friendly, only uses four ingredients and takes less than ten minutes to prepare. Not all sandwiches are alike but I guarantee that these miniature sammies will be sure to score a touchdown with your hungry fans.

Football Sammies

  1. Spray a glass casserole dish lightly with spray oil and set aside. Pair up the bagel chips; there are different shapes and sizes, you want your toasts to match. Set aside.
  2. Using sharp kitchen shears, trim a piece of pepperoni making enough for each set of toasts. Keep the scraps that you trim away.
  3. Assemble the sammies- Layer as follows: bagel chip, shredded cheese, pepperoni scraps, cheese and bagel chip. Do this for all of the bagel chips. Lightly spray with spray oil and bake at 350° for five minutes. Remove, add a bit more cheese on top of the sammies and top with a pepperoni football, gently pushing down to secure to the cheese. Add a piece of shredded cheese on each side of the pepperoni, curving away from the middle to form the football look. Bake another 3-5 minutes until the cheese melts but doesn’t burn.

Sweets Please Even the hungriest sports fans love to have an option for their sweet tooth. As always, our family and friends seem to prefer the grab-n-go items so if you can’t be at a football game, bring the game to you. What’s green and sweet and gluten free? A football field that you can eat!

Fun Size Football Fields

  • Glutino Table Crackers
  • SunButter
  • Green sprinkles of your choice
  • Vanilla frosting
  • Enjoy Life Foods Double Chocolate Brownie Soft Baked Cookies
  1. Spread your desired number of crackers with a layer of SunButter evenly, making sure you spread right to the edges of the crackers. Sprinkle with green sprinkles until the cracker is full and even looking (like a grass field).
  2. Using a frosting bag and a #2 tip, frost 5-7 lines across each sprinkled cracker making sure you begin with the first line directly down the middle of the cracker. Set aside.
  3. For each field, make a football. Take one soft baked cookie and gently squeeze, forming into a football shape. Using the frosting bag, put one frosting stripe on each end of the cookie, then form an upside down U along the top of the cookie. Finish by adding 2-3 slants across the upside down U to form the football lace.
