Cupcakes are pretty simple and easy to make. Make some cake batter, bake them in small cupcake trays, add some frosting and you’re done. While they may be a simple dessert, it doesn’t mean you can’t be creative and make them your own! What’s a better time to try out a new recipe and make some personalized cupcakes than on Valentine ’s Day? Whether they’re for yourself or for someone special, these cupcakes are delicious either way. Try out this festive red velvet cupcake recipe, but feel free to add your own flair in any way you wish.
What you will need: 
Cupcakes –
1 package Gluten Free Pantry Decadent Chocolate Cake Mix
5 Tbsp softened unsalted butter
2 large eggs
1 cup buttermilk
1 oz gluten free food coloring
Frosting –
1 stick of softened unsalted butter
8 oz cream cheese
2 cups confectioners’ sugar
1 tsp gluten free vanilla extract
Preheat oven to 350°. Beat butter until fluffy, then add cake mix, eggs and buttermilk. Beat together until fully mixed. Fill ¾ of cupcake liners with cake mix. Bake 20-25 minutes. Allow to cool.
Beat softened butter until fluffy. Mix in softened cream cheese, confectioners’ sugar, vanilla extract, and beat until thoroughly mixed. Cool for 15 minutes and until the cupcakes are cool, then spread the frosting and serve!
