With the Super Bowl almost upon us and everyone around the office being eager to watch the football year end showdown, I thought it would be fun to come up with a fun dessert idea for those of you heading out to a Super Bowl party this weekend. Everyone knows that most Super Bowl parties include a lot of “stick to your ribs” type entrees and snacks such as chili, potato skins, pulled pork sandwiches, etc. so why not cook up something just as satisfying for dessert!? This week we cooked up a peanut butter pie with a pretzel crust… it may not sound like much, but this is sure to be a hit this weekend or any other time you need to bring something to a party. Not to mention it is very easy and quick to make!

What you will need:
Crust:
3/4 cup of softened butter
2 1/2 tbsp of brown sugar
2 1/2 cups of finely crushed Glutino Pretzels Twists (you could also use the sticks)
Filling:
1 cup of Earth Balance Creamy Peanut Butter
8oz (1 package) of softened cream cheese
2/3 cup of brown sugar
1 cup of heavy cream
1 tsp gluten free vanilla extract
Chocolate syrup for an added drizzle on top (optional)
To make the crust crush up 2 ½ cups of Glutino Pretzels, then in a medium-large bowl, mix together with the softened butter and brown sugar. Using an 8 or 9 inch pie plate, press the mixture evenly into the pan. Preheat the oven to 350°F and then bake for 7-9 minutes.
Remove the pie crust and allow to cool. While the pie crust is cooling off, in a medium-large bowl mix together the peanut butter, cream cheese, and brown sugar. Combine these ingredients using an electric mixer on a medium setting to remove any clumps. After the ingredients are have mixed together add in heavy cream and vanilla extract and mix together on a medium-high setting.
After the pie crust has cooled, spread the filling evenly into the crust. We decided to drizzle some chocolate sauce on top of the pie to give it a lattice look and a little chocolate flavor, but this is completely optional. After you have added the filling be sure to put the pie into the fridge until you are ready to head out to your party!
