WHAT: According to Packaged Facts, sales of gluten-free products are expected to top
$696 million in 2006 and $1.7 billion by the end of 2010, as an increasing number of companies seek to develop products catering to the more than three million Americans living with celiac disease and one in six adults living with a food allergy or intolerance (Mintel).
