Buffalo Chicken Sloppy Joes



  • Olive oil
  • 2 lbs ground chicken
  • 1 chopped sweet onion
  • 2-3 cloves of garlic (for flavor)
  • Salt and pepper
  • 1/3 cup of hot sauce (Franks original is gluten free)
  • ¾ cup of gluten free chicken stock
  • 2 tbsp apple cider vinegar
  • 3 tbsp brown sugar
  • 1 tbsp gluten free Worcestershire sauce
  • 8 oz shredded smoked Gouda cheese
  • 8 oz shredded sharp cheddar cheese
  • 12-16 pieces of Genius by Glutino sandwich bread


In a large skillet, heat up olive oil and cook the ground chicken until it is no longer pink and slightly brown. Lower the heat and add in the onion and garlic and heat until the onions have softened. Be sure to stir the mix, in order to avoid burning the chicken. Add salt and pepper as you see fit. Once the onion and garlic are tender, remove the skillet from the heat and prepare the sauce.

In a large pot mix together the hot sauce, chicken stock, vinegar, sugar, and Worcestershire sauce. Add in the chicken, onion, garlic mixture and stir together.  Turn the stove on at a low setting and add in the gouda and cheddar cheese. Stir together until the cheese has completely melted. Serve warm on Genius by Glutino Sandwich Bread, and enjoy!
