Cocktail Cheese Puffs


Serve these to all of your guests without apology. They will never guess that these are gluten-free!

Variations: Recipe may be doubled or tripled. Dough may be wrapped around baby franks, mushroom caps or olives for delightful hors d’oeuvres.


  • 1/2 cup Gluten Free Pantry French Bread and Pizza Mix
  • 1 1/2 teaspoons baking powder
  • Pinch of salt
  • Pinch each, of cayenne, paprika, and white pepper
  • 1 cup grated sharp cheddar cheese (reduced fat cheeses are fine)
  • 4 Tablespoons unsalted butter, softened at room temperature


  1. Combine dry ingredients.
  2. Using fingers or a portable mixer (low speed), blend in butter.
  3. Fold in cheese.
  4. Form into 3/4-inch balls (1/2-inch balls for bite-size puffs).
  5. Place 1-inch apart on ungreased cookie sheets and freeze for 1 hour (puffs may be stored frozen for later use.)
  6. Preheat oven to 375 degrees.
  7. Bake frozen balls 12-14 minutes.
  8. Cool 10 minutes and serve.
