Stuffed Strawberry Cheesecakes



  • 20 large strawberries
  • 8 ounces of cream cheese
  • ½ cup of chopped almonds
  • 3 tbsp confectioners’ sugar
  • 1 tsp gluten free vanilla extract
  • 2 tsp cinnamon (optional)



In a medium (microwave safe) mixing bowl place 8 ounces of cream cheese and microwave on high for 30 seconds or until it is soft. Then mix together the cream cheese, sugar, vanilla, and cinnamon. Place bowl in the refrigerator to keep cool. Then wash the strawberries and cut out the hull of the strawberry. Put the chopped almonds into a small bowl and then spoon in the cream cheese mixture. Take the filled strawberries and dip the top into the chopped almonds. Place finished strawberries on a dish and allow the cream cheese mixture to cool in the refrigerator. Drizzle with chocolate if desired (we thought this might have been interesting looking back on this dessert, plus we absolutely love chocolate).
