Glutino Snack Recipes

Try one of these delectable dips!  These recipes are sure to please any crowd.  They are perfect for parties or just to have as a snack!

Salmon Bagel Chip Dippers

  • 1 (8 ounce) package reduced-fat cream cheese with chives
  • 2 tablespoons milk
  • 1/2  teaspoon dried dill
  • 1 (8 ounce) can salmon, drained and flaked or ¾ cup finely chopped smoked salmon
  • 1 cup shredded Mozzarella cheese and Sharp Cheddar cheese (reduced fat is okay)
  • 1 bag Glutino Bagel Chips
  • 1 cup ripe tomato, chopped
  • 1/2  cup sliced green onions, optional

Line a baking sheet with parchment paper.  Set oven to broil and place rack on second highest position.  Combine cream cheese, milk and dill in a small bowl. Stir 1/2 cup salmon into cream cheese mixture.  Arrange bagel chips in a single layer on the baking sheet. Randomly drop cream cheese mixture by teaspoonfuls over chips. Top with remaining salmon and shredded cheese.   Cook 2 to 3 minutes or until cheese melts.  Remove from oven and top with tomato and green onions. Serve warm or at room temperature.


Black Olive Dip (makes 1-1/2 cups)

  • 1 cup mayonnaise (low-fat is okay)
  • 1/4 cup black olives, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons lemon juice
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

Combine all ingredients and serve with Glutino Bagel Chips.
Variation:  Replace black olives with chopped roasted red peppers


Warm Cheddar and Bean Dip

  • 2 cups canned white beans, rinsed and drained
  • 1/2  cup gluten-free beer (1/2 to 3/4 cup) or apple cider
  • 1 clove garlic, peeled and cut into thirds
  • 1/2  teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1-1/4 cups grated sharp cheddar cheese
  • 1/8 to 1/4 teaspoon Tabasco sauce
  • 2 green onions, tops and roots discarded, minced for garnish

In a food processor, combine beans, beer, garlic, cumin and salt.  Process until smooth.  Add 1 cup of the grated cheese along with the Tabasco Sauce and process just until combined. Place the mixture in an attractive, heatproof dish. Sprinkle remaining 1/4 cup cheese over the top.

Bake in a preheated 375°F oven for 15 minutes. Sprinkle with green onions and serve with Glutino bagel chips.


Fabulous Cucumber-Cream Cheese Bagel Dip

  • 3   green onions, tops and roots discarded, remainder cut into 1 inch pieces
  • 1/2 a small cucumber, seeded and cut into chunks (about 1/2 cup)
  • 1 (8-oz.) package reduced fat cream cheese, softened
  • 1 teaspoon Worcestershire sauce
  • 1/8 teaspoon salt

Place green onions in bowl of a food processor.* Add cucumber.  Cover and process until coarsely chopped. Add cream cheese, Worcestershire sauce, and salt.  Process until almost smooth. Transfer to a medium bowl. Cover and refrigerate at least 6 hours or overnight.  Accompany with Glutino Bagel Chips.  Makes about 1-1/3 cups spread.

*If you don’t have a food processor, finely chop the cucumber and white part of the green onions. In a medium bowl combine cucumber, green onions, cream cheese, Worcestershire sauce, and salt. Beat with an electric mixer on medium speed until smooth. Cover, refrigerate, and serve as above.


Bruschetta

  • 1 bag Glutino Bagel Chips
  • 3 ripe tomatoes, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chopped fresh basil
  • 2-1/2 teaspoons olive oil

Line a baking sheet with parchment paper. Preheat broiler to high. Arrange the bagel chips in a single layer on the baking sheet. Chop the tomatoes and basil and mince the garlic. In a mixing bowl, combine the tomatoes, olive oil, garlic, and basil. Spoon the tomato mixture onto the bagel chips. Place in the oven for 7-10 minutes. Serve warm.
