Ingredients

For The Stuffed French Toast:

  • 8 slices Glutino Gluten Free White Sandwich Bread
  • 3 eggs
  • 2 cups milk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 4 ounces cream cheese, cut into 8 slices
  • 1 cup raspberries

For The Toppings:

  • 1 cup raspberries
  • owdered sugar
  • raspberry syrup

Instructions

  1. In a 9 x 12-inch dish, beat together the eggs, milk, sugar and vanilla. Lay 4 slices bread into the mixture for about 30 seconds, turn the bread over and soak the second sides.
  2. Put the butter into a large skillet, about 12-inches across, and set it on medium-low heat. Swirl the melted butter to coat the entire surface of the pan. Lay the 4 soaked slices of bread in the pan.
  3. Divide the cream cheese pieces and raspberries among the bread slices, covering the surface of each evenly.
  4. While the French toast is cooking, soak the last 4 slices of bread on both sides and then use them to top the French toast “sandwiches”. When the bread is golden on the bottom, about 2 minutes, use a large spatula to carefully turn the French toast. Cook until the second side has browned nicely, about 2 minutes.
  5. Set on plates and sift powdered sugar over top of each. Sprinkle each with some fresh raspberries.
  6. Serve, passing the syrup separately.
