Peanut Butter Cookie Ice Cream Sandwiches

Ingredients

  • 1 1/3 cups  Glutino Gluten Free All-Purpose Baking Flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup Justin's Peanut Butter
  • 1/2 cup shortening
  • 1 teaspoon gluten free vanilla
  • 1 egg
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup crushed Glutino Gluten Free Pretzel Sticks
  • 1 tub of your favorite gluten free ice cream or dairy alternative

Instructions

For the Cookies:

  1. Preheat oven to 350 degrees
  2. Grease cookie sheets
  3. Beat together peanut butter and sugar in large bowl until smooth
  4. Add beaten egg and baking soda to mixture and beat until mixed
  5. Roll 1 teaspoon of dough into a ball and place on cookie sheet
  6. Place dough balls 1 in. apart and flatten with tines of fork (cross pattern)
  7. Bake for 10 minutes or until golden
  8. Let cool for 5 minutes

 

For the Ice Cream Sandwich:

  1. Use cookie scoop – scoop ice cream and drop onto one cookie
  2. Press another cookie down onto the ice cream to create a sandwich
  3. Coat the sides of the sandwich with crushed Glutino Pretzel Sticks
  4. Place baking sheet in the freezer
